Title: I must be hungry...
Post by: earthmuffin on March 30, 2011, 09:11:23 PM
The country ham discussion got me thinking about other regional or local delicacies that I have been missing. I was thinking it would be fun to hear if you have some favorites that you have encountered or if there are some famous to your area.

Mine are (in no particular order):

Virginia ham-- a dry salt-cured ham

Pasties (pronounced pass-tees)-- a pastry filled with meat, rutabaga and carrots that is popular in the Upper Peninsula of Michigan

Spedies-- cubes of lamb, pork or chicken marinated in a special sauce and served on a slice of Italian bread from upstate New York

Coney dog-- In Detroit, they have restaurants that just serve hot dogs and fries with cheese and onions or chili on them. You can actually get a pizza with coney dog and onions on it there.

Brats and hotdish-- eaten a lot in Minnesota. Brats are greasy sausages usually cooked in beer and then grilled. Hot dish is any type of casserole.

Halupchi -- a Ukranian dish of cabbage leaves stuffed with ground meats and baked in a tomato based sauce. There are many variations of this.

Ranch dressing-- this is a new one I am beginning to develop a taste for. Here in northern California people eat it as a sauce on everything including pizza.

"Green spaghetti" and stuffed zucchini-- My mom raised us on these northern Italian dishes. It wasn't until I was much older that I realized that green spaghetti is actually pasta with pesto.

I love this topic!! I spend a lot of time in my kitchen cooking. This morning I have homemade white bread baking or will be once the last rise is done.

Coney Dogs: Love them with everything under the sun on them. This does gross out my husbands family when I eat these. LOL

Sushi- love california rolls and about anything in this catagory

Truthfully, I love about any type of food and love making new recipes or trying new things. I have to check out the cooking section but just haven't made it there yet. Maybe I will have time this weekend. Time now to get ready to walk the streets (ok I put up fliers for my business not hookering).

Have a wonderful day!!

A Seattle staple, our version of fast food, is rice bowls.  Little teriyaki shops are almost as common as Starbucks.  Five dollars will get you rice, teriyaki chicken or beef, and salad with ranch dressing.  I eat them way too much.   :D

Some of my favorite Southern foods are Fried Chicken, Chicken and Dumplings, Biscuits (served with strawberry preserves, honey, or sausage gravy), and a meal made of Soup Beans (which is usually Pinto beans cooked with hog jowls or ham hocks), Fried Taters and Cornbread.

Some Appalachian desserts that I am fond of are Blackberry Dumplings made from wild berries, Apple Stack Cake, and Fried Apple Pies.

It has been a while since I had another Appalachian dish known as Kilt Lettuce.  This is a dish of new spring lettuce and green onions that has be wilted with a mixture of hot bacon grease and vinegar.

I am originally from Texas and the thing I missed most from there was real TexMex.  Thankfully, that situation improved shortly after I moved here due to a change in demographics.  Another thing that I miss from there is sliced beef brisket BBQ.

DS is making me hungry. The blackberry dumplings sound like they could be a favorite of mine and also possible apple stack cake. Might have to get some of these recipes. I'm wondering is Kilt Lettuce "killed" lettuce?  :rotflmao:

Nothin' but bacon grease!

EM, I do believe that "kilt" is hillbilly for "killed".

I have never written down the recipe for blackberry dumplings.  Basically, you pick a good mess of them berries and add about 1/3 as much sugar as you have berries.  Then you bring it to a slow boil and drop the dumplin's in there and let 'em cook till they shrink back down.  I use basic biscuit dough except I add sugar to the dough.  Then you serve 'em hot with some cream.  Yummy!

I think my stomache and intestines just complained about some of the food items posted.  :omg: I guess that's what happens when you are a wellness coach. But love the idea of some balackberry cobbler. A small portion would be great!!!

What kinds of foods do you usually eat then? And I am betting you don't make all your bread items from scratch do you? Spaghetti warehouse kicked me in the butt  :ill: Now I know why I fix most everything from scratch myself at home.
